With our busy schedule, sometimes it’s hard to fit in a good, home cooked meal. I managed it yesterday only because it was day 2 of two days off.
What did I prepare? Fish, corn, green beans, and rice.
I put rice in the lower tray of the steamer, and green beans and corn in the two top trays. I added butter to them both, plus added a bit of onion soup mix and brown sugar to the green beans. I also added the soup mix to the rice. I let that steam about 15 minutes before I started the fish.
I put sliced onions and red bell peppers in the electric skillet with olive oil. After I sweated them, I added fish fillets right on top of them. I tossed in some lemon basil, and sprinkled in salt and pepper.
Everything got done at the same time, so in all it was about 40 minutes from start to finish. Not bad for a whole meal, I think.
It all looked very appetizing on the plate, and it tasted great. We love fish cooked this way anyway, so it’s always a hit.
