My first attempt at making ice cream in the EuroPro went ok. It was still very soft but it tasted great. The second attempt was a failure and I’m not sure what went wrong. It started to freeze, then suddenly started melting.
I’ve been mulling this over today and I will be trying some new tactics. One, is that I think all the ingredients will need to be chilled. The first attempt, the ingredients came out of the fridge so they were already chilled nicely. But the ingredients for the second one were pretty much room temperature.
Also, I think that even though the canisters came straight out of the freezer after overnight freezing, they thaw too quickly. I might try putting a thick towel around the whole thing to see if that insulates them enough to freeze ice cream before they thaw out.
I’ll keep you updated on my progress tomorrow, since I just put the canisters in the freezer a little while ago.
